Summer Veggies Recipe - I do love me some grilled veggies! To modify this recipe for campfire, double wrap in foil and place in hot coals, turning frequently.

ingredients
(use whatever veggies you like, I would add onions)
- 1 zucchini, sliced
- 1 yellow summer squash, sliced
- 1 red bell pepper, cubed
- 1 (8 ounce) package baby bella mushrooms, quartered
- ½ bunch asparagus, trimmed, cut into thirds
- ½ (10.5 ounce) container grape tomatoes
- 3 tablespoons Roasted Garlic Infused Oil (order here)
- 1 tablespoon Onion Onion Seasoning (order here)
directions
- Combine all ingredients in a gallon freezer bag. Seal well; toss to coat.
- Prepare grill to medium heat. Place grill basket on grill. Empty contents of bag into basket.
- Cook, stirring occasionally, until veggies are crisp-tender or desired doneness, about 15-20 minutes.
